The other day I was craving chocolate… I mean really craving chocolate and I all I could fathom eating was a gooey-chewy old fashioned brownie! So I took it upon myself to whip up and bake a batch of gluten free- sugar free- guilt free- rich chocolate brownies. These are so easy to make and you probably have most of the ingredients in your pantry. And talk about yummy! My family couldn’t contain themselves from scarfing down these healthy treats. My husband didn’t believe that these weren’t traditional brownies and said he actually liked my version better! My Rich Chocolate Brownies are moist, chewy and so delicious! It packs a punch with chocolate, so run and grab your Almond Milk to wash it down. Its full of fiber and even a good dose of protein. It’ll satisfy your sweet and chocolate tooth while kicking traditional brownies to the curb! Your body and waistline will thank you too. Bon Appetit!
Rich Chocolate Brownies:
Ingredients:
1 Large Sweet Potato
1 Ripe Banana
2 Eggs
3/4 C Unsweetened Cocoa Powder
1/2 C Semi Sweet Chocolate Chips (You can use Enjoy Life Chips)
2 Tbsp Almond Flour
2 Tbsp Coconut Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
2 Tsp Vanilla Extract
1/2 C Honey
1/2 C Sunflower Seed Oil
Coconut Oil Cooking/Baking Spray
Directions:
Before you begin mixing the ingredients, wash the sweet potato and slice a line through the skin with a sharp knife- place the sweet potato with the slit facing up in a microwavable safe dish with an inch or two of water. Cover the dish with a microwave safe plate or lid. Place in the microwave and set it to cook for about 10 minutes. You’ll know the sweet potato is done when a knife or fork will pierce through to the bottom. Once its finished, remove the skins from the sweet potato (be careful, its hot!) and set it aside to cool.
Preheat the oven to 350 degrees. In a mixing bowl mash together the pre-cooked sweet potato and the banana together. Add the Almond Flour and Coconut Flour. Next add the eggs. Toss in the remaining dry ingredients. Pour the honey, vanilla and sunflower seed oil into the bowl. Mix all ingredients together thoroughly. Set aside. Take an 9×9 baking pan (I used glass) and spray the pan lightly with Coconut Oil Cooking/Baking Spray. Pour the brownie batter into the baking dish and place in the oven for 25-30 min. Insert a small knife or toothpick to ensure they come out clean and the brownies are done baking! Let the brownies cool before cutting into squares. Makes 12 2 inch brownie squares.
